    Vegan Recipe Catchup Part Deux

Did yesterday’s post make you hungry? No? Let me try again, only these eats have a bit more of a fall flair: Pumpkin-Pistachio Kale Fried Rice Bowl with Maple Tofu—This is the winning recipe of the batch. If you’re pressed for time, click the link, hit Print, and call it a day. The flavors were phenomenal, the maple tofu was out of this world, and I just about cried when I realized my food was over. Curried Carrot and Sweet Potato Soup—Another perk of working at my fabulous job is talking to authors who are just as health-conscious as I am. Our outdoor cookbook author Laurie Ann March shared this…

    Catching Up On Vegan Life

I used to blog all about my delicious vegan recipes that I was trying. And then I got lazy with cooking and even lazier with blogging. I’m still vegetarian 90% of the time, but I’ve eaten my fair share of eggs and cheese over the past few months. And now it’s football season in the South, which means I devour any plate of BBQ that comes within my reach. But since I haven’t been running at all, I finally started to make an effort toward going primarily (minus smoked piglets) vegan. Because you can only burn so many calories by just being awesome. So here are some of my recent favorite…

    All The Fall Things

I love fall. I love apples and sweaters and crock pot recipes. I live for boots. October is my favorite color. Name a fall cliche, and I’ve done it, worn it, eaten it, or lived it. Fall has been my favorite season since I was old enough to understand seasons. Or happiness. Since fall=happiness. So I have to admit, I’m more than a little resentful of those people who jumped on this fall bandwagon. These people don’t love the schizophrenic weather and crunchy leaves and itchy sweaters. They like fads. The flavor of the week, if you will. And it happens to be pumpkin spice. Like every other loyal fall lover,…

    Eating Minneapolis

End of June post from when I went to Minnesota for business coming atcha! *flashback music and wave ripples* Well. I successfully ate and drank my way through Minneapolis. And loved every unhealthy, unclean moment of it! I made a conscious decision going into this trip that I would set aside all vegan and clean eating beliefs for the week and just enjoy myself without guilt. Plus, I hadn’t had a chance to try midwestern craft beers, so I had to do my due diligence and see how they stacked up against Birmingham beers. New city, new tastes to explore, right? Kind of a backwards approach at a wellness conference,…

Eating My Way Through the Mountains

Do you know who hikes all day, every day for 9 straight days and gains weight? A glutton. Otherwise known as Tanya. Typically when we travel to a new place, I see it as a challenge to find the absolute best places to eat. No calorie wasted. No silly vegan diet. Every meal gets way too much research poured into it. This time, I left the meal planning to the hubs. Not an easy task for a Type A person like myself. And boy did he knock it out of the park. So sit down, undo the top button of your pants, and get ready for a mountain gastro-adventure: The Road…

    May Vegan Eats

Maybe I’m a day or twelve late with my vegan food post. My b. But the recipes were still cooked and consumed, so I’m going to share them with the blogging world. Polenta and beans—Are you craving carbs, have random things in your fridge, and very little time before your arm becomes your appetizer? This recipe is for you! Stupid easy to throw together, and it made for great leftovers the next day when the spices had all blended together. Quinoa vegetable salad—Ladies and gentlemen, we have the new summer potluck picnic winner! Colorful, healthy, perfect for passing around a blanket while downing a cold beverage Tomato and chickpea salad—Are you…
